Tartelette al lemon curd


E che ci facciamo allora con questa pasta per tartelette? E con questo lemon curd? Beh oddio, non ci va un genio per rispondere a questa domanda……….



TARTELETTE ALLA FRUTTA E LEMON CURD (ispirate a questa ricetta)

frutta
cioccolato
4 albumi (io ho usato quelli rimasti dalla preparazione del lemon curd)
⅓ cup zucchero

Sciogliete il cioccolato al macroonde, poi con un pennello spennellate le basi delle tartelette. Questo per evitare che, assorbendo il lemon curd, la tarteletta diventi gnecca (=molle). Io ero un po' scettica perché non ero sicura che col gusto limonoso del lemon curd il cioccolato stesse bene, ma preferivo rischiare piuttosto che avere una tarteletta gnecca, quindi… Ma diciamo che forse avrei preferito senza. L'accoppiamento nn mi è piaciuto tanto quanto quello di crema pasticcerà o chantilly e cioccolato. Ma sta a voi, se le consumate subito potete farcirle senza coprite la base.
Mettete un cucchiaino di lemon curd nelle tartelette. In alcune ho messo una rondella di banana tra i due strati.
Io ne ho fatti tre tipi: alcune cioccolato, lemon curd, frutta. Altre cioccolato, banana, lemon curd, meringa. Altre cioccolato, lemon curd, frutta, meringa.
Per la meringa sbattete i 4 albumi con ⅓ cup di zucchero fino a che diventano lucide e consistenti. Sistemateli in una tasca da pasticceria e decorate la superficie delle tartelette (non alla canina come me…).
Passate in forno funzione grill per 1 minuto (tenetelo d'occhio!).


Io non ho trovato né fragole, né lamponi né more, ho dovuto usare altro e le mie tartelette sono un po' tristi ma… Insomma vi potete sbizzarrire quanto volete!


FRUITS & LEMON CURD TARTELETTES
lemon curd
tartelettes shells
fruits
chocolate, melted
4 egg whites (if you just made the lemon curd, you can you those whites)
⅓ cup sugar


Melt the chocolate and cover the bottom of the shells. This is because if you make them in advance, they will get soft by absorbing the lemon curd. If you don't like the two flavors together (I'm actually not a fan either), you can skip the chocolate, but make sure you eat all of the tartelettes pretty soon! ;).
I made three different types:
1) chocolate-lemon curd-fruit
2) chocolate-banana-lemon curd-meringue
3) chocolate-lemon curd-fruit-meringue
For the meringue, just beat the egg whites, then add the sugar and beat until glossy and stiff peaks form. Place it into a pastry bag and pipe it on the tartelettes (in a nice way, not like I did).
Put it in the broiler but keep an eye on them! It's easy to burn it.
Store in the refrigerator. I'm not a fan of the chocolate and lemon curd together, but I have to say that after chilling the tartelettes I liked it. The chocolate gives a crunchy bite immediately follow but the smooth enveloping (not sure it's the right word to describe it…) lemon curd. So chill them!!

    1. sisi ero in vena decorativa! ma non ho ancora deciso se mi piace la meringa.... dovrò sottopormi a ulteriori tentativi!
