Apple Tarte cremosa

Sono rimasta estasiata da questa torta. L'ho fatta nonostante avessi fatto una Apple tarte da poco, perché mio padre, che non fa mai complimenti, e si esprime solo per lamentarsi o contestare qualcosa, ha detto che questa era buonissima, e mi ha detto 'Brava', e mi ha anche detto che non l'avrei fatta più visto che sa che "io non mi ripeto". Così ho pensato di scendere a un compromesso e rifare un'altra Apple Tarte, ma con una diversa ricetta. Probabile che non se ne accorga neanche...

E cosi ho fatto un miscuglio di questa, e di questa.

Ne è uscita una cosa buona buona, coccolosa, melosa, goduriosa, per consolare quei pomeriggi freddi in cui viene buio troppo presto, e si ha bisogno di tirarsi un po' su. Altamente consigliata, a me personalmente è piaciuta più di questa, perché rimane più bagnata, più cremosa. Non ho chiesto al genitore quale gli sia piaciuta di più, sempre che si sia accorto della differenza…. (lui ricorda solo che c'erano le mele sopra).

Apple Creamy Tarte

Ingredienti per uno stampo da 24cm:

 

per la frolla:

250 g farina

100 g burro

40 g zucchero

pizzico di sale

1 uovo

vanillina

1 cucchiaio di acqua ghiacciata (solo se serve)

 

per la composta:

4 mele medie

50 g zucchero

½ arancia (ci andrebbe il limone, io ero pigra e non avevo voglia di uscire solo per un limone quindi mi sono adattata)

2 cucchiai di marmellata di albicocche

vaniglia in polvere

cannella

 

per la decorazione:

2 mele

zucchero di canna

cannella

burro

 

Mescolate farina, sale, zucchero e vanillina, aggiungete il burro a pezzetti, poi l'uovo sbattuto in mezzo e impastate tutto fino ad ottenere un panetto da avvolgere in pellicola e mettere in frigorifero mezz'oretta.

Sbucciate e tagliate le mele a dadini, mettetele in una pentola dal fondo spesso (fatelo, perché io le prime le ho bruciate) con lo zucchero e il succo d'arancia o limone. Coprite con coperchio e fate andare a fuoco basso per circa 25 minuti. Quando sono belle morbide scoperchiate e alzate il fuoco per farle asciugare. Fate raffreddare. Aggiungete la vaniglia, la cannella e la marmellata di albicocche e mischiate il tutto.

Stendete la frolla e ricoprite la tortiera imburrata o coperta di carta forno, versateci la composta dentro, terminate con le 2 mele tagliate a fettine sottili disposte come più vi piace. Con le mele coprite bene la composta. 

Spennellate con del burro fuso, poi spargeteci sopra un po' di zucchero di canna misto a cannella. Infornate a 200 gradi per 10 minuti, poi abbassate a 170 e proseguite fino a a doratura della frolla. Quando è quasi pronta spennellate ancora con poco burro fuso e azionate la funzione grill. Non andatevene perché faranno in fretta le mele a dorarsi ai bordi. La torta allora sarà pronta.

APPLE CREAMY TARTE

Since my father never gives compliments but complains a lot, when he said this tarte was really good and I did a good job, I had to make it again. Since I like to try new recipes and I had a few I wanted to try, I thought to make another Apple Tarte, following a different recipe. He probably won't even notice… 

This is where I got it. I mixed these two: this one, and this one.

Apple Creamy Tarte 2

Ingredients for a 9" pan:


for the frolla dough:

250 g flour

100 g butter

40 g granulated white sugar

vanilla 

1 egg

a pinch of salt

1 Tbsp ice water (only if needed)


for the apples compote:

4 medium size apples

½ orange or lemon (lemon is better, I didn't have it)

50 g sugar

2 Tbsp apricot jam

cinnamon

vanilla


for decoration:

2 apples

brown sugar (I mean cane sugar)

cinnamon

butter, melted


Make the dough by mixing the flour, the salt, the sugar and vanilla. Add the butter cut in pieces, then the egg, beaten. Make a ball and store in the fridge for half an hour, wrapped in cling film.

Cut the apples in small pieces, put them in a pan with thick and heavy bottom, add the sugar and the lemon juice and cover. Cook at low heat for 25 minutes. When they are soft take off the lid and increase the heat. They need to dry up and caramelise a little. Switch it off and let cool. Once cooled, add the jam, the vanilla powder and the cinnamon as you like.

Roll out the dough and cover the greased baking pan, pour the apple compote inside. 

Cover the compote with the 2 apples, sliced thinly and disposed nicely all around. 

Brush with a little melted butter and sprinkle with some cane sugar mixed with cinnamon. In the oven at 390F for 10 minutes (heat from the bottom), then decrease to 340F and bake until the edges are golden.

Brush with some more butter and bake in the oven with the grill on, for a few minutes, until the apples start to get dark.

I loved it warm… Up to you but it's good in any way. Perfect for a winter cold afternoon, when outside gets dark too early and we need some comfort food to cheer us up.

  3. WOW!!! cavoli deve essere deliziosa. Io adoro le torte di mela che rimangono umide e scioglievoli e questa ne ha tutto l'aspetto.

    1. Beh, se ti piacciono le torte alle mele, te la super consiglio! A me è piaciuta. Ma poi le torte di mele sono proprio coccolose....Buon natale cara!
