Crema pasticcera con uova intere

Quando da un errore si arriva a qualcosa di buono… che finisce immediatamente nel quaderno degli appunti!

L'idea era adattare questa ricetta per la crema pasticcera alla dose con 5 uova. Poi, mentre già avevo agguato il latte e la crema era sul fuoco, guardandola tutta schiumosa mi sono chiesta che cosa stesse succedendo, quando ho realizzato… avevo messo le uova intere!!! Non avete idea di cosa mi è uscito di bocca, dopo l'incidente con pandispagna col buco… Poi però mi sono ricordata che avevo già fatto una crema con uova intere, e che anzi mi era piaciuta molto… Sono andata a controllare per scrupolo e si, in effetti la crema c'era… con dosi totalmente diverse, ma c'era. Così ho continuato a mescolare, sperando che venisse anche con le mie dosi.

Oh, non ci crederete ma non solo è venuta. morbida e vellutata e senza grumi, ma era anche buonissima!!! non ho dovuto neanche aggiungere la panna, cosa che in genere faccio per stemperare un po' il forte gusto di uova. Era già perfetta. E quindi finisce qui. Tra l'altro, le proporzioni sono così facili da ricordare che non ci sarà neanche più bisogno di fare calcoli! Meglio di così….

Crema Pasticcera con Uova Intere 1

Ingredienti:

5 uova

5 cucchiai di zucchero

5 cucchiai di maizena

buccia di limone

830 ml di latte

vaniglia

(aroma arancia)

(100 g cioccolato bianco)

 

Ispirata a questa ricetta di Paoletta, che avevo già provato qui seguendo le sue dosi.

Sbattete le uova con lo zucchero fino a farle diventare spumosissime e il composto diventa chiarissimo; mentre nel frattempo fate scaldare il latte con la scorza del limone e la vaniglia. Aggiungete alle uova la maizena, setacciandola. Mescolate per amalgamarla e poi aggiungete il latte caldo, a filo. Rimettete tutto su fuoco basso, continuando a mescolare con una frusta fino a quando non inizierà ad addensarsi sul fondo. Allora mescolate energicamente fino a che tutta la crema diventa bella densa e cremosissima. Spegnete. (A questo punto se volete potete aggiungervi il cioccolato bianco tritato e farlo sciogliere). Rovesciate in una ciotola, coprendo con della pellicola direttamente sopra la crema (la pellicola tocca la crema), così che non si crei la pellicina e la crema resti liscia e cremosa.

Quando la crema è fredda, se non avete già usato il limone potete aromatizzarla con qualche goccia di aroma arancia mescolando bene. Se volete alleggerirla ulteriormente, potete aggiungervi una spruzzata di panna montata.

 

CUSTARD CREAM WITH WHOLE EGGS


In order for me to enjoy custard cream, it must be mixed with some whipped cream, otherwise it tastes too much of eggs, and I don't like it. But because of a mistake, I found out a very nice alternative that I think will completely substitute the classic custard in my kitchen. This recipe uses whole eggs instead of just yolks, and this gives it a lighter texture and flavour with no need to add whipped cream.

Crema Pasticcera con Uova Intere 3

Ingredients:

5 eggs

5 Tbsp granulated white sugar

5 Tbsp cornstarch, sifted

lemon zest

vanilla

830 ml milk

(orange flavor)

(100g white chocolate, ground)


Beat the eggs with the sugar until foamy and fluffy, they must be of a very light colour. Don't get tired and be patient, it will be worth it (you will want to beat the eggs directly in a pan big enough to contain also all the milk).

Meanwhile, heat the milk with the zest and the vanilla inside.

Add the sifted cornstarch to the eggs, mixing gently, then pour the milk while stirring. Put everything on small fire and never stop stirring with a whisk. It will start to thicken at the bottom, keep on stirring until all the custard will be smooth and creamy. At this point, switch off the heat and you can add the white chocolate if you want, melting it with some energetic stirring. Pour the custard into a bowl and cover with wrap paper laid directly on the custard to avoid the surface to dry out. Let it cool completely. When cooled, if you didn't add the zest before you can give it a little orange flavour.

Use it as you like, and if you want you can still add a little whipped cream to it.

    1. Uuuuuhhhhh meno male! Io invece non ero contenta delle foto che non rendevano assolutamente giustizia alla consistenza soffice e morbida della crema. Ciao cara, buona settimana!

  2. ma pensa... inoltre finalmente non avanzano gli albumi che poi mi fanno fare la meringa e ingrasso ancora di più! Bravissima, ha un aspetto delizioso

  3. Ahahahahahahhahah! Esattamente! Ogni volta che avanzo gli albumi sono contenta perché finalmente posso fare i biscottini al cocco solo che poi finisce sempre che avendo già un altro dolce da far fuori poi me li dimenticò nel frigo!!!
