Plumcake uvetta e canditi - Versione 1

Qualche settimana fa ho avuto il 'periodo del plumcake'. Ne avrò sfornati senza sosta almeno 4 in 3 settimane. Finiti e ripuliti dalla sola me nel giro di 36-48 ore (l'uno, non tutti e quattro, eh!). 
Ero rimasta molto entusiasta del Plumcake tropicale, quindi mi sono basata su quella ricetta variandola e mettendoci canditi e uvetta perché avevo le voglie (no, non sono incinta. In astinenza, sí, incinta, no) e alla Metro avevo trovato una busta enorme di arancia candita. Volevo i canditi misti ma in Cina non si può essere troppo pignoli quindi mi son presa la busta d'arancia ed ero ben contenta!
Quindi questa è la prima versione del Plumcake Uvetta e Canditi.

Ingredienti:
2 uova
1 vasetto di latte
1 vasetto di olio
1 vasetto di zucchero
3 vasetti farina
2 vasetti fecola
16 g lievito (1 bustina)
vanillina
1 pizzico di sale
uvetta
canditi misti

Separate i tuorli dagli albumi. Sbattete gli albumi a neve con un pizzico di sale. Sbattete i tuorli con il latte (io ho usato una frusta non elettrica), poi aggiungete tutti gli ingredienti e amalgamate bene. Aggiungete gli albumi e mescolate dal basso verso l'alto, delicatamente.
Rovesciate il composto in uno stampo da plumcake e volendo terminate spargendo qualche candito e uvetta sulla superficie.
Infornate a 180 gradi (calore solo sotto, parte centrale del forno) per 40-45 minuti (vale prova stuzzicadenti).

Il plumcake è delizioso, molto leggero e aromatico ed è morbidissimo!! Lo consiglierei con una bella tazza di tè o ancora meglio (ma gusto personale) tagliato a pezzi nello yogurt… A me piace così!
Potete anche spalmarci sopra della marmellata… Insomma, fantasia!

RAISIN & CANDIED ORANGE PEEL POUND CAKE

I made it because I was craving for candied orange peel (weird, huh?) and I loved it! And now that Christmas is coming up, it's just perfect! Very Christmassy. I just modified this recipe.

NOTES: Originally, my intention was to use the yogurt jar as unit of measure (a jar of yogurt, a jar of sugar, a jar of oil, 3 jars of flour, …) but I bought milk instead of yogurt so I used that instead. The procedure, though, doesn't change. Use the same jar/glass for everything. A yogurt here is about 125 ml, just for reference.

Ingredients:
2 eggs
a jar of milk
a jar of sunflower oil
a jar of granulated white sugar
3 jars of flour
2 jars of cornstarch
16 g baking powder
vanilla
a pinch of salt
raisins
candied orange peel (or mixed candied peels)

Separate the egg yolks from the whites, beat the whites with a pinch of salt until stiff. With a whisk slightly beat the egg yolks with the milk, then add all the other ingredients except the peel and the raisins. Add the egg whites and mix . Be delicate, we want a soft cake. Last, add the raisins and the candied peel (I didn't weight them, but I put a lot), amalgamate and pour in a loaf pan covered by parchment paper.
In the oven at 350F for 40-45 minutes. Do the toothpick test for doneness.

The cake is really soft and no spongy at all, it's light and delicious. I loved the orange flavour. I like to enjoy it cut in little pieces in a cup of yogurt. Or with some jam on a slice. Or with tea, maybe? I mean, there's room for imagination! Just enjoy it!
